Cooking Fish
« on: Jan 19, 2012, 09:49 AM »
I see all these great catches on the board and wonder if any of you enjoy them after on the dinner plate.   I am looking for some good receipes.   I love Calico and Bass. I ususally just use some Uncle Bucks batter and fry in my electric frier.  Any one do anything special?   Also any tips on the best way to filet?

I'm sure you've heard this, but eating bass is not the best idea. They live a long time and absorb a lot of toxins. I don't want to lecture, I've eaten them also. I find that panfish are a MUCH better eating fish anyway.
Cheers,

Pete

I bought a "Panhandler" at the end of summer, and can't believe how well it works. The only place I could find it was on Cabela's site. It fillets both sides of the fish at once, and is so quick and efficient I think you"ll be amazed. It's designed for panfish but some reviewers say it works on perch too. Costs 49.99, but the time you'll save over the years will make it worth it There's a video that shows how easy it is to use.

The fishing was good; it was the catching that was bad.

Electric fillet knifes are the best little invention since the hook out.

Dip them in egg and milk, shake them in pancko flakes seasoned with
pepper and Old Bay, 375 degree oil for 1-2 minutes a side.

Thanks Guys   I love the panko receipe.  Sounds awesome.    To be honest I never heard of the toxin issue with bass. Learn something new all the time.

Wow I agree with Capt over something .............. the electric fillet knofe was one of the best investments I made. Fillet fish in seconds.

I take a heavy stout beer add flour and dip the fillets in it then I transfer the fillets back to the beer then dip in cornmeal fry in crisco in a pan and the finished product is worth it !!

Well guys have several different methods of cooking the fish
- Dunk the fillet in the eggs/milk or the buttermilk
- Roll the fillet in crushed up Ritz crackers or Kellogg's corn flake crumbs which is my fav
- Fry them in vetable oil for 5-7 min per side
If you have never used the Kellogg's corn flakes here is what they look like
http://www.kelloggs.com/en_US/kelloggs-corn-flake-crumbs.html
my mouth is watering now!

For the grill
- Make a tin foil boat put the fish inside this
- Garlic, butter, Italian dressing, peperonicini rings or banana rings which you can go mild or hot
- Put a tin foil top on it, poke a few holes and depending upon the size of the fillet (40" Stripper 22 minutes)
- My summer time favorite there guys!
