Simple But Good Fillet Recipes

Can you guys help me out by giving me some simple but good fillet recipes that you like to use?
Those Mason-Dixon boys aint got nothin on the PA GOATBOYS!!!

Get 2 bottles of Rolling Rock beer (cold).  Dump 1 bottle in a bowl  and add flour to it until it thickens just a bit.  Add some season salt and a little pepper to it.  In a 9 inch frying pan add about 1 cup peanut oil and heat it up to about 350 degrees (this is important!). Dip the filets in the batter and then lay into the peanut oil.  The filets will start to brown on the edges in a matter of a minute or two and then flip them over.  Cook an additional minute or two and then place on paper towels to absorb the extra oil.   The batter should cook to a crispy golden brown.  

Oh yeah...wash it down with the 2nd bottle of Rolling Rock!  ;D

If you want really simple... Heat a pan with just enough olive oil to coat the bottom.  Take your fillets and season them (this were you can be creative) on both sides.  Pan fry on both sides just enough to cook through and lightly brown the fillets.

As for seasoning, I've used everything from Old Bay to whatever I find on the spice rack.  I usually use a mix of salt, pepper, ground cayenne, and oregano.

Another simple one;
Pour a little white wine in a skillet and turn it up. Season fillets to taste; I like fresh dill, lemon pepper, and garlic for a basic start. Toss in the fillets and back off the heat a bit if it's boiling wildly. Cook a few minutes a side , or until completely opaque. Enjoy! White wine goes well, or beverage of choice.

dip the fillets in egg....roll on a mixture of 1/2 breadcrumbs and 1/2 ground pretzels.  pan or oven fry

get 4C bread crumbs, and put them in a bowl add lots of old bay seasoning and some salt and pepper, stir it all together, keep adding old bay until the 4C is a reddish color and then put the breading in a big plastic bag, add your fillets and shake like shake and bake, then either put in deep fryer or in a pan with enough oil to cover the fillets,  fry until golden brown then flip and fry till golden brown.

Ive posted this one on this site before, but its good enough to post it again!  You have to try this.. its awesome!!!!

Take your fillets and lightly coat them in Mayo!.. LIGHTLY!

Salt and pepper, then sprinkle with Parmesan cheese(the good stuff, not the stuff in a can)

BROIL for about 8-9 mins till the cheese starts getting golden brown...

ENJOY!!!

roll fillets in seasoned flour or shore lunch batter, then dip in some french dressing and deep fry,cook until they start to get crispy.

One more for you. Put Italian bread crumbs in a ziplock bag. Add Chili powder to taste. Place fillets in bag and shake 'em up until they are coated. Drop in hot oil in frying pan. Cook each side until brown. Drain on paper towel. Pig out!!!!

I like to use a 50/50 mixture of flour,corn meal and instant whipped potato flakes, season to taste. Pat fillets dry, dip in egg and roll in flour mixture, pan fry a couple of minutes each side until golden brown. The potato flakes make it nice and crunchy.       enjoy   biggjimm

Crappie Scampi is a fav at our house.....
Dry off fillets and place on parchment paper covered cookie sheet. Rub fresh crushed garlic on the fillets, salt/pepper to taste. Place pats of butter on the fillets and bake in the oven at 375 for 10 -12 minutes. Serve with a little grated parmesan.

Marinade the fillets in Itialian Salad dressing for 1 hour
cook for 8-10 minutes wrapperd in foil on grill and let the eating begin

Theres alot of good recipes here. My only suggestion would be when pan frying a fillet use 50% light or extra light olive oil and 50% butter. The butter has a very low smoing point and the olive oil will help to raise it up a little bit. The problem I have with the oils with higher smoking points is that they tend to over power the natural fish taste that i'm looking for. As far a seasonings a little salt and black pepper is a must (good base)
i'll go from there and change the recipes up i'll do a creol one with a little red pepper (of your choice) and some garlic brought to temp in the oil before fish is added to flavor the oil. If you want anymore go ahead and contact me. The cool thing about fish is that its basically a blank canvas and you can incorporate lot of different flavors into it through many different techniques.

Dry fillet and then dip in liquid butter (rendered or whatever)

Roll in crushed sour cream and onion potato chips till coated

Bake at 400° until done, no more than 10 minutes

Enjoy with favorite beverage.

I like House Autry seafood breader. Just throw wet fillets in a bag and shake and fry. I use it for panfish fillets.
