ive tried all the recipies you fellas have talked about, as far as pan and deep frying go. no matter what they all have tastes that are to like, but my generalization is that fish that dont taste fishy are the best to eat.what do you think?

You hit the nail on the head.  That's why i hated eating fish when i was younger.  When I had fish, it was simply taken out of the salt water it was soaking in and rolled in some shake and bake and cooked.  Their was too much of the original water still on the fillet when it was cooked.

When I fillet my fish i throw them in water as i'm cleaning
when i'm done cleaning I get new bowl and rinse and inspect each fillet
when i'm going to cook I rinse them again, one by one
I use paper towels to dry all the fillets, I'm not shy about using a bunch of towels either.

Once dry, then you start cooking.  If you don't get those fillets clean, you might as well throw them out.  I also think the eggwash is a big factor that eliminates the fishy taste.

SOAKING IT IN MILK WORKS THE BEST. IF YOU TAKE BASS FILLETS,& THEY DO TASTE FISHY,PLACE THEM IN A ZIPLOCK BAG WITH A GLASS OF MILK 1/2 HR BEFORE COOKING, YOU"LL NEVER KNOW YOU ARE EATING BASS.IT WORKS GREAT.

Try buttermilk.  I found that it takes the "muddy" taste out of the fish that you might catch in summer in warm shallow water.
