Pickled Pickerel

I just tried this recipe I found on IS, Pickled Pickerel

2 tsp Pickling spice
2 ½ tbs kosher salt
¼ cup sugar                                         
1 onion
white vinegar

Cut fillets in to small strips
Fill 1quart jar ¾’s w/fish
Add, salt, sugar, pickling spice and sliced onion
Fill jar with white vinegar / shake until all dry ingredients dissolve
Refrigerate 5 days [give it a shake the 3rd day]
You may eat it right out of the jar or mix it with a little sour cream and eat on a cracker

[Yes the vinegar cooks the fish and with the help of the salt dissolves the bones]


first time experience with pickled fish. I liked it, but thought it was a little too salty. Anyone else tried it with a little less salt? Don't see how it would hurt, as long as your keeping it refrigerated and don't keep it too long.

My buddy makes it.  He has some recipe that is super secret.  It doesnt last long whenever he makes it.  He was talking about going on a junk fish mission this morning in order to make a batch.

I've been working moving snow, running snow sled, cleaning roofs, so I guess you're right, I'm going down to my smelt shack and relax. I don't even care what the tide is or if the fish bite!!!  ;D ;D
