AWARD WINNING WHITE CHILI

I have had numerous request for my white chili recipe, so I thought I would post it here for those who would like to try it.

It's easy to make and takes less than an hour.
               
WHITE CHILI   
                     
Ingredients:

Pulled meat from one roasted chicken
Two 48 oz. jars of “Randall Brand” ready to serve Great Northern Beans
3 or 4 little tubs of Knorr homestyle chicken stock jelly (I use 4)
4 (4 oz.) cans diced “Hatch” chilies (I use 1 hot and 3 mild)
8oz. cream cheese (room temperature)
8oz. sour cream (room temperature)
8oz. heavy whipping cream. (room temperature)
4oz. (1 stick) butter
1 cup whole milk
1 pound of shredded mushrooms, yes, they must be shredded. (I use a cheese grater)
1 cup sliced celery
2 cups diced onion
1/2 cup chopped fresh Italian parsley
3 TBS minced garlic
2 TBS dried oregano
1 TBS chili powder
1 tsp to 1 TBS of garlic salt (I use 1 TBS)
1 tsp ground cumin
1 tsp black pepper
1 tsp red pepper flake



Preparation:

1 – Add butter to a large stockpot over medium heat (I use a 10 qt. stockpot)

2 - Add onion, celery, shredded mushrooms, and garlic. Cover and cook vegetables for about 5 minutes or until tender. This will make some liquid, which is needed.

3 – Add beans and bring to a simmer.

4 -Add chilies, chicken stock jelly, oregano, chili powder, ground cumin, garlic salt, pepper, and pepper flakes. Simmer covered for about 5 minutes.

5- Add chicken meat and simmer covered for another 5 minutes.

6- Whip the sour cream, heavy cream, milk, and cream cheese in a large bowl until smooth.

7 – Stir the whipped heavy cream, sour cream, milk, and cream cheese mixture into soup until fully incorporated.

8- remove from heat

Serve and enjoy!

I used to roast off a chicken, now I use store-bought rotisserie chickens. After picking all of the meat off the bones, I mince up the crispy skin. Then add it in along with any juice from the chicken.











Chili and what is "real" chili varies dramatically by area. This is often debated and sometimes debated very enthusiastically. ;)

Depending on the area you may hear:

Tomatoes can't be used or tomatoes must be used.
Beans can't be used or beans can be used.
Ground meats are not allowed it must be shredded or diced meat.
The list goes on and on.

Some areas actually think they invented chili.
Even though people were cooking meat with peppers in North America long before we were a county.

I like them all and haven't found a chili I didn't like, although some have been hotter than I prefer. :o

i may try this or similar. no mushrooms and sub cilantro for the parsley etc

As an award winning chill cook myself I have to give your recipe a try! Yes I know if I don’t have pictures it didn’t happen! Finished product looks good, only thing I can say is if my wife likes it it is a success! Thanks for the recipe, cooking it this afternoon.
