If they are real active and flopping, I'll stab them once in the side of the head, right behind the eye.  More so to keep them from putting a fin in my hand than to put them out of their misery.  Like stated above, once a side is taken off they are pretty much dead and it only takes about 3 seconds to do that.

True, that's one way to clean eelpout. Put em under a rear tire and do a burn out.
