Do Lake trout taste good?
« on: Jan 06, 2018, 04:37 PM »
It seems as though there are a lot of people excited about catching lakers in Lake George. Are they good eating?

A lot of guys speak poorly of them, but a just-legal sized lake trout is excellent table fare, IMO.  A few seasons ago, I brought home a similar-sized lake trout and landlocked salmon and cooked one of each fillets side by side.  They were both excellent and I doubt very many guys could tell one from the other in a blind taste test.

Tight lines,
Bob

I put them in McCormick Brazilian smokehouse marinade for about 30min and grill them fat side down first (try to get most of the fat off when you fillet them) takes about 5min per side on higher heat but i like the outside to be blackened a little. Very good.... dont use tin foil keeps the fat from cooking off and wont blacken. Try it and let us know!

They have a strong fish flavor and are very oily. Broil them after soaking them in a bribe of your choosing.  Taste like more.

They are ok smoked, but the best fish for smoking is whitefish.

Perhaps the lake trout down your way eat different foods.  Ours up here are delicious whether they are fried, smoked, grilled, baked or steamed.

Many a shore lunch is fried up with lake trout, and served with baked beans or fried sliced potatoes and onions.

I personally love them a lot of people don't. The body of water you get them out of I think does make a difference.

Funny that a guy from Colorado would not exactly enjoy lake trout. The only one I ever ate that tasted good was one my brother caught in a res in Colorado. Actually edible. As far as NY lakers go, I think Trap nailed it.

For me! I can not stand the taste of any trout. And to be honest not a fan of salmon. I do like Pike walleye crappie perch and blue gill tho. To me Lakers have a song taste of nastyness and they seem greasy. I have tried to cook them several different ways still gross to me. A blast to catch and release tho

New York State Lakers , including Lake Ontario giants, cut into 1 inch cubes , moistened in an egg wash then rolled and coated with seasoned bread crumbs and deep fried to a golden brown are darn good !

Pop those deep fried laker cubes in your mouth plain  or dipped in  your favorite dipping sauce and enjoy.

Just goes to show ya, some people are good cooks and some are not.

Really depends on the preparation and the cook.  For those of you that don't like the fishy taste, soak skinless fillets in milk for 30 minutes and then use whatever recipe appeals to you.  The milk takes a lot of the fishy taste out.  Most of the oily taste comes from the lateral line reddish brown strip down each side of the fish. Try to trim this off when preparing fillets and wash thoroughly in cold water.  I have heard of people trying to bake the entire fish skin and all.  My advice would be to put it in old shoe, bake, throw away the fish, and eat the shoe.
