Fish cakes

During the summer I caught a 25-27" pickerel. Decided to keep it and made fish cakes. They were great.

My fish cakes include:
sweet potato
white potato
sauteed  onion,pepper, garlic, celery
black pepper
salt
mayonaise
hot sauce
worcestire sauce
mustard
fish filets- *grind the pickerel if you like . Some of us dont get the extra     y bones out and  grinding them does the job.
bread crumbs

Directions:
I usually use 2 potatoes and 1-2 pounds of filet. Cook the potato and mash. Add the sauteed vegies.  Add the chopped fish filet (raw). Add seasoning and other flavorings(sauces).  Make into patties and cover with a layer of bread crumbs.
Cooking- Fry the cakes in olive oil until they brown . 2 minutes
Transfer the cakes to a cookie sheet and bake at 350 for another 20 minutes to cook the fish and blend the flavors.

Serve:  We love them with spagetti and tomato sauce.

You can use any fish.  Let me know how they come out.
I made pickled pickerel this week. It turned out excellent. I told my friends to save the pickerel for me. Everybody turns them back.
