Geese in a few small flying groups of 20s, not sure what kind of geese. There's more in the farm field.

There has been flocks of lesser Canada’s that never migrated in the area all year

as long as the snow is minimal they will stay all winter...its the feed they cant get to when the snow is too deep, then they head south. They use the river for their sanctuary during the day. Ducks there too

You bet! I took a package of goose sausage ice fishing this evening. It made me think of geese while not catching fish. Slow fishing.
Even slower for goose hunters. It will be a while yet.

do you make your goose sausage the same as deer with pork and spices

I take no credit for the sausage. All my goose goes to Maggie's Sausage in Saskatoon. Valdemar mixes it 50 / 50 with pork. His secret ingredient is juniper. The result is simply brilliant. It is my favourite wild game sausage, and he does a fine job of venison to be sure. Just make sure your meat is really clean. If it doesn't pass inspection, "no sausage for you"!

Try breaded goose cutlets some time. Butterfly the breast, pound it flat, dust in seasoned flour, dip in egg and coat with parmesan /  Panko crumb mixture. Very fine. Your company will have no idea they are eating goose.

My favorite:Cut breast into thin strips, Jalopeno, onion, cream cheese, roll up, wrap with bacon and tooth picks. Place on grill, when bacon is done serve rare, don't over cook! People can't get enough!!!!
