Baked gills

First time for baked bluegill, and it was awesome!! Wife was gone, so just made enough for one. Small glass baking pan, four strips of cooked bacon, crumbled, pepper jack cheese-1/4" strips, Tony Chachere's. Seasoned gills w/ Tony's, baked on 350 for 5 mins. Remove pan from oven, turn it to broil- low, crumble bacon over fillets, lay strips of cheese lattice style, on top, put in oven for 5 mins, cheese starts to turn brown on edges, it is done. Used fillets from four gills. Steve
