Smelt Recipes?

Anyone have any recommended recipes for smelt? Do you eat the skin?

Mine;

Cover in bread crumbs with salt, pepper, and a little chili powder.
Fry til golden brown in peanut oil.

Basic, so I was looking for some other recipes. Post here!

All I do is roll them around in flour, deepfry till gold brown, and the sprinkle with Lemon Pepper seasoning as soon as you take them out of the oil. When my kids were small they use to call them fish fries.
Be safe out there, and set the iron.
