If you're looking for someone somewhat local try Carlsons Fish Taxidermy in Maine http://www.carlsonsfishtaxidermy.com/
Ive been happy with his stuff.

Ive been happy with his stuff.

Love the ice fishing reproductions.  The trout with the tip-up is pretty cool.
