the wifey says she doesn't like fish...  :wacko: and i've never really cooked 'eyes before. lotsa bass, 'gills, crappies and truckloads of trotline caught flatheads... (and i'm good at those!)

what would be the one way you would cook your catch for your family??? recipe wise this is... your one truly favorite way to go with fillets would be???

We fry eyes and perch in a little butter or oil after dipping them in flour and serve them with fried potatos and onions.  Or fry them with a little seasoning and make fish tacos out of them (cabbage, red onion, sour cream, maybe taco sauce).

Zataran's Fish-Fri on the eyes dipped in hot peanut oil.  Peanut oil is the key!

I agree with Ed, we cook ours in a turkey fryer with peanut oil and zatarains or similar batter. Dipped in egg first, of course.  Beer batter also works very well. But the peanut oil seems to be the key. Seven minutes is usually about perfect with the oil at about 375-400 degrees.

Favorite way for my catch would be fried.



I do have a special place in my heart for salmon, I've never caught one, but I smoke or cook them on my grill on a regular basis.

About the only way we cool them now is to fillet them if they are big enough leaving the skin on.  If they are small just butterfly them from the belly side leaving the skin on.  Cover Them with melted butter then lemon pepper and garlic.  Put them skin down on a real hot grill and let them cook until the skin is burned, never turn them, and that is the best.
