6 Beer Stew

If y'all like stew, be it venison, beef or pork, you need to try this recipe.I've been working on this for many tears and feel it's perfected enough to post. I make relatively small amounts since it's only my Bride and I.

Ingredients;
1 lb meat of choice (I prefer bottom round) in 3/4 inch cubes
1/2 large white onion, chopped
1/2 lb baby carrots, whole
3 stalks celery, chopped
2 medium baking  potatoes, cubed
4 large cloves garlic, minced
4 bay leaves
1 tsp each, dried basil, oregano, parsely
1/2 tsp each, ground cumin, chili powder, black pepper, salt (add more if you like), Luzianne Cajun Spice
1/4 c extra virgin olive oil
1 tblsp Worcestershire sauce
2 tblsp Franks Red Hot
3 tblsp butter
1 cup all purpose flour (seasoned with salt and pepper)
6 cold Heineken (MUST be Heineken!)
4 frosted beer glasses

Open 1 Heineken and pour into frosted beer glass (Consume at leisure)

-Dredge cubed meat in seasoned flour shaking off excess flour (I use a strainer)
-Heat olive oil on high, in a large, heavy pot and add meat to brown
-Add garlic and vegetables and saute till onions are tender. Stir often to prevent sticking. reduce heat if necessary.

-Better pour yourself another frosted Heineken...the first one's probably gone ;D

-Add seasonings, bay leaves, Franks and Worcestershire. Continue to saute, stirring to mix all ingredients.
-Add 1 full bottle of Heineken and stir, scraping the bottom of the pot to de-glaze
-Bring stew to a bubble, stirring to prevent sticking
-Add butter and stir

-Better pour one more frosty cold Heineken.......Why Not?

-Add 1 more full bottle of Heineken, bring back to a bubble then reduce heat.
-Simmer gently for at least 1 hour (2 hours is even better)

If more liquid is needed, add a small amount of water. I usually add a cup of hot water and a chicken bouillon cube for flavor.

Serve topped with shredded Parmesan cheese and  garlic toast.......And enjoy that last Heineken  ;D

I just had a bowl, MMMMMMMMMM good!

I opted for the red wine with dinner. Bully Hill, Love My Goat, MMMMMMM Good, too!
