balsamic vinagarette walleye

Just made this last night and it was amazing...

sautee an onion and a red pepper in 2 tbs olive oil.
put sauteed goodies into a bowl with fresh baby spinach to wilt it.
in pan, fry walleye fillets with 2 tbs olive oil with salt and pepper.

mix 2tbs balsamic vinegar with 1tbs honey, pour into empty pan to thoroughly heat and pull up left behind flavors.
put fillets over spinach mixture, drizzle vinagarette.

Best "non-deep fried" walleye I've ever had.

Pretty healthy too!
