Title: Saltwater Smelt

Anyone have any interesting ways to cook up Sea Smelt? I always role them in corn meal, add some salt and pepper, and cook them slowly in butter on the stove top. We get hundreds every winter and would be interested in finding a few ways to cook them up.
I smoked some once, but that is a delicate way to do it and have them come out just right.

I sometimes like to deep fry them in a thin batter, like beer batter but keep it thin and shake off excess then just fry till crispy and start crunching. Yummmmmmmmmm!!!
