Used up the rest of the turkey last night and made a pot pie..

Last night was oven roasted carne guisada nachos topped w/ charro beans, quesadilla cheese, guacamole, Mexican crema and roasted salsa roja.

Breakfast this AM was Spam, potato, egg & cheese tacos con salsa roja w/ my "World's Greatest Grampa" mug full of coffee strong enough to stand a spoon up in and real cream to mellow it.

Nacho re-runs for supper tonight...

Made some bacon for breakfast this morning.

Margarita smoked pork loin and parmesan potatoes

meandcuznalfy:  Right after New Years I cured a 3 lb hunk of pork butt.  Last week I smoked it and turned it into buckboard bacon.  Cold smoked for 6 hrs over applewood.  Finished in the oven to 150 F.  I use wet equilibrium curing @ 2 % total salt.  Then I glazed it with boiled cider.

Pork belly at my grocery store runs $8 -$10 per lb.

I buy Pork Butt on special for $0.97 per lb...
