Best Knife Sharpener?
« on: Jan 13, 2014, 10:39 AM »
What do you use to keep a nice edge on your filet knife? It seems I can keep an edge for so long & after a couple years I can't seem to keep the knife sharp for very long. Last night I was using my filet knife to cut thin slices for beef jerky & seemed I even had to keep resharpening to cut the rump roast.

Growing up my buddy had a round sharpener that you'd put the blade in & slide back & forth on the table. I wish I could locate one. I'll need to look harder.

What sharpener do you guys have the best luck with?

I sharpen with flat stones and then hone after every few fish. You should only need to sharpen once every 100 or 150 fish. You should hone with a steel every 4 or 5 fish.

Agreed.   I use a ceramic steel to hone.  But any steel will wok. I do much better with a stone and steel than I ever have done with a unit you draw a blade threw.

My wife has got one of them round rolly things in her kitchen drawer but shes had it forever.  I use a Lansky sharpener with the rods and stone mounted on a pedestal.

I use a Rada fillet knife and their wheel type sharpener that comes in the fishing knife kit. I seriously think they are the best knives ever made. Anybody looking for a new fillet knife should check them out. Amazingly sharp.. Almost too sharp when new!

I use the Rada wheel type as well, I saw guide using one and he highly recommended it. I pull the knife through every 10 fish or so, I just use a small Rapala fillet knife.

I finally bought a Work Sharp knife and tool sharpener.  My kitchen knives are getting banged up by my kids just tossing them into the kitchen sink.  Don't have time to hone it with the stones.

Amazing fast.  Two passes on each side on the medium belt and it's basically good to go in less than a minute.   Now I should go sharpen all them other dull knives.

Been using a Lansky for years. Whenever my wife’s favorite knife gets a little dull I take a couple hours and do all of the kitchen knives. I have a small ceramic set up to touch up the edge of my fish knife while I am cleaning.
Keep it safe! JDL

I think it is...you can dial it in with a little more/less angle than the standard.  I love mine.
