Northern Pike recipes
« on: Jan 17, 2022, 12:41 PM »
Hello, I’m a new member out of southwest MT and a big fan of eating Pike. I normally fry them coated in dots pretzels. I’m looking to try something new though and wondering if anyone has any recipes they’d want to share.

Boil em chunked up in water/sprite until they float then dunk in garlic butter...heavenly!

Or grind em up ybones and all and make fish cakes.

Like Ran7ger said, but I have boiled them in 7-UP instead of sprite, and then dip them in butter. Tastes close to crab due to the sweetness of the pop.

Debone them, pat dry. Dip boneless fillet in egg/milk mixture, coat with seasoned bread crumbs. Pan fry in butter 4-6 minutes on each side, add lemon juice if you like.

I've been lazy lately, lay fillet on some aluminum foil, add butter lemon pepper onions and a lemon wedge, fold foil up and grill or bake till flakey. Pull all the y bones out after cooking. While I'm pretty good at removing the y bones, is incredibly easy to remove them once cooked.

I'm saving some just for pickling. Are they good? Bones dissolve right?

Bones do dissolve and they are delicious. Tip: put way more onions in there then you think you need. They might be better than the pickled fish lol .

I skip the pickling part and just can them with varying spices or marinades.  Excellent way to take care of hammer handles that would be a pain in the butt to y-bone and an awesome snack on the ice with some crackers.

agree, both are delicious. Just a bit less effort in the pickling process vs canning them. Canned fish definitely lasts longer.

Family favorite for mine is to fillet and debone (yes i know a pain sometimes), chunk into about .5 inch x 2 inch, thin slice a red onion (whole per 3 full fish usually 28" pike), squeeze 3 limes over all of it, salt, mix and let sit over night or at least a few hrs if you can, then super hot butter or oil your choice (i like butter personally) very fast fry on the fish (you can do a quick flour coating for crispness), then slap it on a tostada or street taco tortilla with some avocado tzatziki sauce, fresh lettuce, and some cheese and whammy.....pike street tacos!

You can run the bone in fillets through a blender and make fish patties out of them.
It seems to go from zero to hero all some have to do is lie.

Pan fried. Deep fried. Breaded or beer battered.

Or something that's really growing on me- fish chowder. Throw boneless soup-sized chunks into a chowder (butter, bacon, onion, celery, potatoes, chicken broth/fish stock, cream, fish, salt/pepper/old bay, maybe flour). Works great with smoked trout, too, especially if you mess up and are out of bacon.

It sounds like, much the same as your buckets, you need to clean the fillets a little better. Nothing wrong with pike through the ice- I'll put it up against any freshwater fish.

we love pike.  i never had erg to learn to de-bone them.  if i fry them ill just pull them out as i eat them.  we like to bake them better.  when fillet is baked it shrinks.  all the ends of the y-bones will be sticking up out of fillet.  simply pluck them out and its all bone free.

liberally buttered cookie sheet lay fillets skin side down(no skin on them naturally). sprinkle fillet with garlic onion pepper paprika.  place tiny chunks of butter on top all over fillet. bake 20min at 350 or until browned and flaky. squeeze lemon on top before serving if you like.
