Mac ham and pea salad

Not to make on the ice, but great for this Memorial weekend! Just made a batch. That and some smoked BBQ'd chicken drumsticks, tossed salad with tomatos, and a tall glass of iced tea, and yer set for the holiday!  :P

       Reb's Mac, ham & pea salad


1 1/2 cups cooked elbow macaroni, WELL  drained
3/4 cup frozen green peas, thawed and drained (don't cook!)
1/2 cup cubed ham (I just used some thick canadian bacon today instead, was out of regular ham)
1/3 cup cubed sharp cheddar cheese, cubed small (just cut up 3-4 thick cheese slices in small cubes)
1/4 cup celery, diced
2 Tbsp diced onions
dash of salt
dash of dill weed

Combine all with about a 1  good cup of Miracle whip, and a 1/2 cup thick sour cream until salad is consistency you like. Remember mac will absorb some of it; so always add a bit more than you think you need. May need to add a bit more later.

(DO NOT use the "lite" miracle whip; it will separate and become "watery" in a day.)

Mix all ingredients together well, cover and let sit in 'fridge at least half a day. Makes a nice medium "tub".

Sounds and looks good.  Need to try it, especially since the wife won't eat anything with peas in it.
