Best kept secrets for a top chowder? Haven’t made one in quite awhile and I have some fresh perch fillets reserved to make an honorary batch this week

Why use perch when it is such good eating by itself out of the deep frier ? I usually use pickerel that I first bake whole with seasoning on it, then I flake it as my chowder meat. I would never use precious perch fillets in chowder unless I had 10 pounds of them.

Never done this recipe before, but Brian Brosdahl (Northern MN Perch Guide) swears by it.  Looks good.....

^ This .. I know it says Walleye, but I’ve used it for Crappie, white perch an yellow perch

Personally I'd rather perch in chowder to taste the actual fish instead of breading in oil ...just me
