Title: Rib rub
Post by: Rebelss on Feb 19, 2021, 07:46 AM
Moved this over from another thread....

Here's one ya might wanna try ...... it took a LOT of trial and error before I got it right. (according to the date on my index card, came up with this one in '91) Rub yer ribs with this or use on anything else. One of my buddies loves it on his fish, and one puts it on his burgers. (Don't know about that, though)

  Reb's Rib Rub

3 Tbsps salt (regular or sea salt; your choice.
2 Tbsps smoked chipotle chili powder
2 Tbsps Hungarian Paprika
2 Tbsps onion powder
1  Tbsp galic powder
1 Tbsp coarse ground black pepper
1 Tbsps Brown sugar
3/4 Tbsp Cayenne powder (I like the smoked)
1 Tbsp dried ground Cilantro
1/2 Tbsp ground Cumin
1 Tbsp finely chopped chives

Grind all with a pestle in a bowl, store in an airtight glass container or shaker bottle.
Rub yer next batch of ribs or chicky with this. I think you'll love it.  ;)

I found this late last Summer...and it's some of the best I've ever had. I use alot of rubs from Texas, like Fat Boy's Cowgirl Rub, Cactus Rattlesnake Bite, etc. I marinate all my pork in concentrated apple juice/cider, and spray ribs and such as they smoke with apple juice. I can tell in a heartbeat this stuff has some dried apple in it...I'm hooked on it! Haveta rank it above my Fat Boy's Cowgirl Rub, and that's been #1 for me for years....next to mine, of course.  ;D

Good looking blend Reb! Quite different from the one I've been using. Mine has lots more sweet and some different supporting flavors. Does works very well with the braising liquid for the "Texas Cheat" to make it's own BBQ sauce though. I do like "dry rubs" too.  ;D

Imma going to be mixing some of this up to give it a spin  ;)2  I always spritz ribs/shoulder with apple juice while "basking". My wood of choice is also apple. Go figger.

Pork, the other white meat. Here's some food for thought...

Thanks. I just soaked a 3 lb pork butt in apple juice overnite, plopped in the crackpot with that sweet rub on it, and topped the roast with a cup of cinnamon applesauce. Cooked 'er on low for 6 hrs. Gave my mouth the same feeling Woody Allen experienced with the Orb in Sleeper.  It'll never be the same. Piggers rule.
