A couple of my easy recipes for New years Eve....and one I previously posted of my caviar before, I'll post it again here. That one's more of a pain to make....came up with it 22 years ago. Enjoy.
Snappy Li’l Smokies in BBQ sauce 1/2 cup Sweet Baby Rays hickory sauce
1/3 cup Sweet Baby Rays sweet ’n spicy sauce
1/3 cup ketchup
2 tsp. Bourbon
1/2 tsp Worcestershire sauce
1/8 tsp of smoked chipotle pepper powder or cayenne
One 14 oz pkg of L'il Smokies
Stir well; pour over smokies in ziploc bag. Refrigerate a day ahead of time. Pour bag into fondue pot /chafing dish on low. Keep on very low simmer partially covered as long as festivities last.
Cream cheese roll upsPkg Deli thin sliced roast beef or ham
Mini or baby whole dill pickles
Chive 'n onion cream cheese spread ( bought or make your own )
Lay out slice of roast beef/ham on paper towel and pat dry
Spread thin amount of cream cheese on meat slices, covering entire slice
Quarter pickles length-wise, pat dry
Place pickle on end of meat slice; roll up, use toothpick thru center to keep together.
Refrigerate when done for about hour. Enjoy !
Reb’s Minnesota Caviar1 can black eyed peas, rinsed & drained
1 can black beans, rinsed & drained
½ can (or small can) shoepeg corn, drained
1 large green pepper, chopped
1 large red pepper, chopped
1 large purple onion, chopped
1 Jalapeno, seeded and chopped
1 10 oz can of Rotel Tomatoes with Chiles, drained
Combine all veggies in a large bowl, pour ½ to ¾ cup of light oil over veggies.
(Canola, Wesson, etc)
Vinegar mix:
½ cup red wine vinegar
½ cup of white vinegar
½ cup sugar, mix and heat until sugar is completely dissolved. Let cool to room temp.
Add to vinegar mix:
½ tsp Chipotle chile powder
1 tsp salt ¾ tsp cumin
½ tsp cilantro
½ tsp garlic powder
½ tsp fresh cracked black pepper
1 tsp green tabasco sauce
Pour Vinegar mix over veggies, stir, and refrigerate at least 6-8 hours.
Serve with Tostitos scoops.
