What in your opinion is the best eating fish?

Just curious to know what species of fish you target when you feel like eating fish?Either open water or hard water? I personally target flounder when the stomach is crying for fish.

Walleye on the grill. But since they are hard to come by sunfish/crappie are my second choices.

VC try dipping your cusk(burbot) in butter after frying.Tastes just like lobster ;D
