morning well spent

smoked a couple butts this morning.  apple wood smoke. rubbed two days ago. sluurp

We need a dedicated rib-rubbin pork butt pigger slab steak thread on here! All the good tips from nite-before rubbin' and wrappin' to indirect pans of apple juice/liquid slow mositurizing the slow-smokin' low-temp goodness to bbq slatherin' saucin' and glazin' !!!! We can call it the Pigger Porn thread!!!!  And River_scum can start it out!   :roflmao:

apple wood at 225-275 for 5 hours. then i put them in roaster to bring temps up for pull.  still resting ready waiting to pull.

i just rubbed it with seasoned salt lots black pepper and garlic.  wrapped them and set in fridge since friday.  before it went in i brushed it with some sweet soy sauce with a bit of dales and vinegar in it.  sweet soy is thick and stays on good and gives it that color.  i didnt get real spicy with it because it wasnt for me.  the wife having a party tomorrow and thats the feed.  i have chewed some bark off though. lol  it had a 3/8" smoke ring to it. ;D

going to finish it with open pit mixed with sweet baby rays.  great combo for chicken and wild turkey breast too.

I rub mine with my rib rub  (recipe posted earlier) the nite before, after soaking it in apple juice or cider.Then wrap tightly in plastic wrap. Get a good head of smoke goin from the applewood, set a pan full of apple juice off to the  side, put butt on other side. (Indirect cooking)  Spritz it thru the cooking process with the juice, while maintaining a 200* temp for about 2 - 3 hours, depending on size of butt. (The pigger's)  Slather it with Baby Rays sweet hickory the last half hour of cooking, and pull it when the  internal hits around 150* or so.Put it in a pan and tent with foil for about 30 minutes. Then attack and devour......

sounds good to me reb!

i usually use old bay seasoning as a base for my rubs.  i havent been to a big store, because of the stupid mask rule, to get more.  i found some stores out in the country that dont make you leave your rights at the door, but they dont carry it.  so i do without till its over.  been over a year since i been to walmart and other stores.  they can sit n spin.  my cash is stacking up at least. ;D

Friggin Turdmart has nothing but empty shelves, anyway. Always bare shelves. Mask required everywhere here.....even at the gas station. I wear mine, cuz the COVID killed my Mom right before Christmas, but I AM gettin damned sick and tired of wearing them/ trying to breathe thru the things.

The Sparky way...

Give the butts a good rubbin' and send 'em to the cooler for 24 - 48 hours. Yep, I got Old Bay in my rub  ;)2 I'm not gonna insult anyone by using a certain state name but I cheat. Butts go in the oven in a covered roaster with a braising liquid for about 4 hours @ 180ish. Now you can pull those back ends out and freeze 'em if you want and finish 'em later OR continue the process.

Reserve all that liquid goodness from the roaster pan, give it a rough strain then cool and skim the fat. Pop it on the stove and get it bubbling, not too hard. Just enough to reduce it a bit. Add a tablespoon or two of mustard (you choice), some ketchup (eyeball it to your taste) and reduce it some more. Grab the stick blender and give it a good whirl to pulverize any little bits you didn't remove earlier. Time for a good splash of whiskey  ;D Don't use the cheap crap either, gotta be good enough for the chef to have a swig and enjoy. THIS is your finishing sauce!

On the grill I start just enough briquets to get the wood going. Then it's apple wood chunks. When Puff is going good the butts sit on the opposite side over a large pan of water. They can be out there for a good bit, another 3 hours is about right. Routine spritzing with apple juice until the final application of sauce or you can leave 'em naked. Good either way.

Give 'em a good pulling and serve with homemade slaw, some sautéed greens and corn fritters.

I like this because I can get 'em halfway and finish 'em on the grill in about 3 hours. Taste like they been out there all day. Tender, moist and flavorful. Plus it makes it's own complimentary sauce. Sure I like Baby Rays and Famous Dave's Devils Spit but this came from the flavors and the meat and to marry it back together is just, well, special.

I have a buddy who's profession is a lifetime butcher and sausage maker...he emigrated here with his family from Germany in the early 50's when he was a kid. His Father was a sausage maker. Has a great meat and sausage website. (Can I post it?) Anywho, he rubs all his butts (No jokes now) with regular mustard, THEN pats his rub on heavy before smoking. I haven't tried that yet.....It's just soooooo much fun, experimenting!!!!!!  :woot:

I use his method for beef or pork ribs, except that after I rub I refrigerate overnight to let the flavors have a little honeymoon...

That's a given....tightly bagged or wrapped. I've always said, "they gots to coagulate and percolate!"  ;D

Marinated in apple juice, rubbed in oil and slathered in Reb's Rib Rub....then into the friggentator overnite.

Twin butts ready for the cooler. Sometimes I'll leave 'em for a coupla days. No harm, just give 'em a flip every so often. No extra liquid right now. They make quite a bit on their own.

Wow! Pigger heaven there, 'sox!  You fellers got me so salivatin' and twitterpatin', I had to break out the Weber on this balmy 40* day, on the deck (which I shovel every time it snows so I can do these things) and smoke up ten big drummies. After a good rub with my rub, and and a shot of SBR's Hickory sauce......been 4 months since grill o' rama!  *urp* :P
