Healthy Eating and Bluegills

So Missus Dinkelman watches what we eat, and for medical reasons (cancer survivor) must adhere to a nearly fat-free diet.

We came up with this method of frying bluegills...tastes (IMO) better than deep frying or frying in oil!

Use a good, no-stick fry pan.   Set the heat at 2/3rds what you 'normally' would.
Filet your bluegills, and roll the filets in a mixture of white corn meal and instant pancake batter, seasoned to taste.
Spray the pan liberally with no-stick spray (PAM, etc.) and lay your bluegill filets in the pan and COVER with a glass, clear cover.
Before turning, spray the filets with no-stick spray, then flip.

They'll turn out crispy, tasty and won't be caked in grease!  You can eat healthy AND have fried fish!

Sounds "GOOD" I will have to try IT!!! It hard to beat deep fried gills!!!

Seasoned cast iron and peanut oil is the way to go. I have looked into Teflon no stick and the chemicals that come out of that stuff when heated are very bad for you. Also kind of leery about oil in a spray can.

Can we say flame thrower Farmer Ted? We have an opens tove and i was warming a pan up for grilled cheese- sprayed that stuff while the flame was one and it was bad- nice big cloud of flame and a burnt grilled cheese. They should really say that is for electric only  ::)

A healthy low-fat alternative for gills: a little white wine, spice to taste; I like basil,garlic,pepper, and a little fresh dill. Cook til white in a skillet at medium heat. Just chowed down on last nights catch; mmmmm good. I like fried and breaded too, but this method is both simple and quick, as well.

or you could bake them, dip in egg, then a flour and salt/pepper mixture, comes out terrific! but sometimes i prefer to throw a tsp of vegetable oil in the pan and fry them that way, (another way is to deep-fry them in the mornings bacon grease) but that recipe sounds good! i'll have to try that
