best white meat recipe

I use this for:
LM, SM Bass
Walleye
Stripper
White Bass
Panfish

i fillet out all my fish and than dredge them in egg role in crackers (Ritz) and lemon pepper mix, i don't know how much lemon pepper to add i have been doing it for 9 years so i can just look at it and tell... so experiment with it.... than fry in some bacon grease or shortening and than eat.... best fish ever.... hope you enjoy.... pics included to give a play by play....

I personally like LM bass. I like the mild taste & texture of them. Also, their fillets are often thicker. I do soak them in milk prior to breading. I do really like them.

i do this same thing with my lm stripper and trout before i bread.... and there fantastic i love all the fish i use this batter for.... my family eats fish 3-4 times a week! were fish and fishing lovers....

although I LOVE white fish fried in oil, sometimes I'll just do this:

-melt apprx 1tblsp butter (or magarin) with 2 tbspls of olive oil in a pan
-dust fillets with Tony Chachere's creole
-brown one side 2-3 min, flip, and dust again
-brown another 2-3 min or until flaky through
-if you are feeling fancy, squirt in a little lemon juice and add a few capers at the very end


slop this on top of some hash browns and carmelized onions and dig in!!!

Have to try the lemon pepper.  Looks good.  Thx crappielover.

I would make one change...Dredge the fillets in flour first, then egg, then breading.  Helps the breading stick to the fillets.

Also, just to clarify...

StriPer = silver fish w/ black stripes, eagerly takes a variety of baits and lures, delicate flavor and texture.

StriPPer =various colors, slippery to land, occasional strong fish odor, best baits include paper bills.

The wife doesn't mind me eating the occasional striper.  Not the same opinion of the occasional stripper.  ;)
