Not my recipe but this is now the only coating I use. I've tried most of the others: Drakes, Panko, seasoned flour, cornmeal, crackers, chips, etc. Not a fan of batters either. As for my side...a cold, creamy and crunchy bowl of coleslaw.

Since it is advertised as a catfish 'breading', what fish do you use it on and how do you cook the breaded fish?  My primary 'fried' fish are perch (my all time favorite fish), bass, walleye, crappie, and bluegills.  We either smoke or oven bake trout/salmon - never breaded; never fried.

I use it on ALL my fish except catfish...I don't like them.😉 Bluegill, perch, crappie, walleye... doesn't matter. And I deep fry everything. My wife has talked about using it on chicken too.

Bigassbassman has posted a breading recipe under "Nate's Feisty Fish Tacos with Cilantro Lime Sauce" under the Ice Fishing Cuisine board as well as the Colorado board. Read that

before going out to buy some commercial catfish dredge. Just no comparison and your mouth will thank you. If you're after a catfish breading, use Nate's recipe but sub in about a

third of the wheat flour in the first step with corn flour (not corn meal). Available at Walmart.
We're born, we live for a while, and then we die.  Sounds like a good reason to go ice fishing.

Soak fillets in buttermilk.
Season dredge with Old Bay and season salt. Don't over season.
Then dredge in Krusties pancake mix everything included mix.

Cook till golden brown. Hit with non iodized salt to taste. Easy and very good.

We like potatoes salad but just about anything works for a side.

I use a recipe with basic measurements of one cup of panko ( I prefer the crunchiness of panko to other bread crumbs) and one third cup of flour. Season it as you like it, I use salt, black pepper, chili powder and a few other things. I use peanut oil to fry. Before frying, I soak the fillets in buttermilk, and put them in an egg wash with the tablespoon of honey, then into the panko mixture and Into the pan. I use for fish or chicken, and it's a huge hit with my child

My go to is

- dip filets in whipped eggs or milk

- throw filets in a gallon ziploc bag full of Italian breadcrumbs, a liberal amount of garlic salt and quite a bit of pepper (hows that for measurements).

- fry on low heat until golden brown on each side.

If I’m feeling lazy I’ll grab some
McCormick fish fry mix and some Cajun fish fry mix. I’ll mix it together as the hot Cajun stuff is too much for my gut to handle! Then fry!

I mix this with an equal amount of cornmeal for all my fried fish.  Works for me!   ;D

Fish tacos ( perch, bluegill, crappies)- flour, taco seasoning, add water for batter. Deep fry and top with Cole slaw and lemon juice (and whatever other condiments you choose)

Smoked fish dip (trout)- smoke trout. Flake up into cream cheese with some old bay. Fire on crackers.

If I'm frying up on the ice shore lunch is my go to.

I’m with Trent. Egg wash, Italian seasoned bread crumbs. Only difference is I deep fry.

My favorite fish batter recipe:
Dip fillets in flour
Dunk fillets in whipped eggs in bowl
Dip fillets in batter mix!
FRY fillets

Batter mix:
1/2 cup flour
3/4 cup pancake mix
1/4 cup corn meal
1/4 cup Country gravy mix
Kinders Buttery seasoning
salt/pepper
Onion powder
Lawreys Garlic salt
Cavenders Greek seasoning
Tonys Creole seasoning
Mix all batter seasonings together, I usually taste batter to check. Sorry i never measure seasonings. The batter is sweet with a kick.
I just fried up Crappie tonight with this batter, my wife and Kids love it.

We like Cole slaw with our fish fry.
1 - bag Cole slaw mix
( I pulse it in the food processor for finer slaw)
1/8 cup buttermilk
1/8 cup milk
1 tsp Apple cider vinegar
1 tsp lemon juice
2-3 tbsp sugar or Splenda
1-2 tbsp mayonnaise (not to much, I just eyeball it)
Sometimes I use a squirt of ranch salad dressing)
Salt and pepper
Mix well and refrigerate.

This was a copycat KFC Recipe that I tweaked to our taste.
