I was eating garlic curds in the shack yesterday, and a couple missed my mouth and went down the hole. Still a slow bite, thought maybe the gills would come running for the cheese!

Extra sharp cheddar, smoked with apple chips or bark. I like smoked cheese, if you have a smoker it's very easy. It usually takes about an hour. Use small batches of chips, or twigs, and turn every 15 min. That's with an old school Luhr Jensen. The only real trick is to keep the temp down. Keep the cheese up pretty high, away from the heat source.

Well cheese is sorta like beer with me. If its there I will eat it. But you cant beat an extra sharp cheddar with a piece of pepperoni and a cracker

Not many will know this cheese.
Enjoyed it when I was in Cyprus but hard to find around where I live.

I really wish it'd pick up in popularity.  I purchase a case every now and then, it freezes well.  I hear nothing but good things when I introduce people to it.

In my college years I had the great opportunity to work in a cheese factory.  Yes, I'm from Wisconsin.  I worked the auger and "tubed" cheese.  My room mate was in packaging, needless to say we were able to get fresh cheese when we wanted.  I always hated making pepper jack (burning eyes) however the bounty of fresh pepper jack was awesome.
