Recipe for a maple cured venison sommer sausage?

Does anyone have a good recipe for a maple cured sommer sausage or even a breakfast sausage, that they would like to share?  I refilled the freezer with a new deer and a new pig, so anything that is left over from last year will be hitting the grinder, mixer, and stuffer right after the holidays.
