Hey lake I'm from kingston! Nice to see another local on here. But other then that, egg em, bread em, fry em, eat em. I add a few spices to the Italian bread crumbs with alittle heat to it. But perch in general are just delicious little fixins

coat fillets in egg whites, roll in cornmeal mixed with cajun seasoning and salt, deep fry in cast iron. mix some franks redhot with tarter sauce. dip, eat, drink, repeat.
You can get a good look at a steak by sticking your head up a bull's a$$, but wouldn't you rather take the butcher's word for it??

My favorite recipe:
Heat frying pan
Add butter
Insert fillets
Add pinch of salt and black (or white) pepper.
I'll substitute garlic salt if I'm cooking for others.

It's simple, quick, and doesn't cover up the true nature of the food with sauces and what-not.  ;)

Heavily seasoned flour > egg > crushed up saltine crackers > frier = perfection. Also what really makes the meal is homemade tarter sauce. Chop up dill pickles add to mayo to the consistency that you want, add some dill seasonings and pepper and now your cookin in peanut oil baby. Learned the crushed saltines in Alaska and have never looked back.

breaded in seasoned panko breadcrumbs and then served in soft taco shells with all your favorite fixins like salsa sour cream etc etc.

Do the egg milk dunk - however fry in 2/3 olive oil and 1/3 butter.  My coating consist of Italian bread crumbs with a little yellow corn meal added plus some garlic powder - salt and pepper during the frying. Fry a big batch as they are delicious cold...
  Years ago a fellow i met on the ice gave me a recipe for fish patties in which i use perch and or blue gills. - I use to use up a days catch making about 25 to 30 patties - freezing in zip lock bags and enjoying after a short microwave warming.  Lost the recipe - only remember a small portion - anyone have a pattie recipe they would like to share.  Thank you

I to just pan fry butter sprinkle with nature seasoning salt and pepper to taste

my wife likes baked [ fish Spencer] fast and easy

baked I like  cream of mushroom soup add no water spread some on bottom of baking dish place fillets on the soup then cover the fillets with the rest of the soup cover and bake 350

Egg wash then into a flour and lemon pepper seasoning mix and into the fryer. Everyone I cook for approves!

I'm not a big fan of the crumbs or crunchy filets so here is what I like to make them puffy and airy light.
Take some quality beer and pour it into pancake dry mix. Mix it to a semi thick batter and drop filets/ chunks in .
It will stick well without using anything else.
Drop them in hot oil until they float and turn golden brown.
Take out and they will melt in your mouth :) :)

Drakes crispy fry mix, available at GFS use as a breading or batter mix also great to do some onion rings after all the fillets are finished.  Real easy and light tasting, you can also use it as your wash before using your favorite breading and it comes out extra crunchy.

I'm a big fan of the typical egg bath and breadcrumbs.
I like to cut horseradish in with my egg bath. No dip needed.  ;D

horseradish is freakin good, gonna have to try putting that in the batter my bro and I use next time
