SMOKED FISH HOW TO

I like to take smoked fish meat and mix with cream cheese,onion,garlic. Spread on crackers. What I was looking for is some new brine recipes for smoking fish. If you have one that you like let me give it a try.
Take a kid fishing,they make great pack mules.
Put the big ones back for another day eat the small ones.

This is my brine recipe:

1 gal water
1 cup salt
1 cup dark brown sugar
1/2 Tablespoon bay leaf
1 dried red cayenne pepper(crushed)
1/2 Tablespoon thyme

A friend of mine smoked perch.He soaked it in Brine and then smoked it. You eat bones and all. Really good, but the thought of eating bones is a little weird.

Check out my post Feb 9th re Smoking Trout which appears just above your post in this recipe section. I provide a great recipe for brine, and other how do type things which I have used over my last 50 years of fish smoking experience.Recipe brine provides a Cabela Premium Smoked Fish type product.
