« on: Oct 22, 2006, 12:36 PM »
Anyone have a good baked fish recipe for bluegills or perch? the ones i came acrossed are usually for larger fish such as whitefish or salmon.

Low fat, whats that... ;D

But seriously...try this........use a deep dish casserole style pan and cover the bottom with a spiced up tomato soup (whattever your fav spices are) lay the fillets on top, and add more soup as well as cut up mushroom and bake them togther. The fish will soak up the soup mix and be tasty tasty, you can also use this method while steaming on the BBQ....for thicker sauce sub soup mix for pasta sauce

Similar to icejunkys.  Use a deep casserole dish, add one can of tomatoes, put some fillets on top, favorite spices, and onions, garlic, mushrooms, peppers, etc.  Bake covered.  If you choose you can also melt some margarine or butter on the side to drizzle on the fish when done for a little extra flavor.  As a fishing guide I eat about 100 plus shorelunches a summer and this one is sure a nice, lighter change from fried fish every day.    8)
