Corn, Canola or Peanut are all good.  Peanut is the most expensive of the three. Biggest thing is, don't use Olive Oil, it has a much lower splatter point than the others.

Amsoil sabre  at 100:1. :woot: Canola is the mildest, peanut oil will affect the taste some, but not in a bad way.

I like to use canola, for the price and the health facts, its damn near the best oil for you, as far as oil goes....look at the fat % and all the other stuff on the label next time your at the store, not much difference between canola, penut and sunflower oil..

canola or canola and canola

That's the conclusion I've come to as well.  ;D

Peanut's not bad, but more expensive.
Used to just use vege oil to save on cash, but it's worth the extra $$ to go with canola.
Seems to be the most mild flavored, letting you taste more of the fish IMO.
If you ever get hit with a bucket of fish, be sure to close your eyes. ;)

if you're going to be frying up a large amount, you might want to check a local warehouse store or restaurant supply and pick up some commercial fryer shortening.  made to hold up to hard use and not impart any flavor.

peanut - highest burn point - lasts longer than other oils too.

That or pan fry in butter - which is plain out awesome!!

Canola, the only advantage with peanut oil is that it doesn't hold flavor, you can fry anything in it after you fry fish and it will not taste like fish.
