who knew?

So, after catching a nice feed of walleye yesterday, the wife asked me to make some for supper tonight. Not wanting to deal with the work and smelly house that comes with frying em up, I looked for an easy solution. It came in a can of Chunky New England Clam Chowder.  Mixed the can of soup with four walleye filets (cut into three pieces each) baked at 325 uncovered for about half an hour, served over rice with some fresh greens. An awesome alternative to the bland baking and the greasy frying.
Still counting.....

I will sometimes cook up panfish in butter and lemon juice, scramble the fillets like eggs and mix into Alfredo sauce and put it over noodles
The fishing is always great, the catching however, always isn't

Don't have any walleye on hand, but some fresh pike is getting your treatment tonight. I can't wait for supper!

Try this with panfish or slices of larger fillets.
 In a small greased casserole,
Place a layer in the bottom of the dish. Spread low fat ranch dressing over the fillets, top with seasoned Italian bread crumbs.
Repeat for 3 -4 layers and bake covered at 350 till bubbly, remove cover and brown slightly. Let set to cool for 15 minutes or so.

You can add layers of spinach or other veggies if you like. I like to add layers of summer squash, zucchini and spinach.
