Lemon Pepper baked Crappie

EXTREMELY simple and less messy than setting up a breading station.  Works well with crappie 10"+ as well as 12"+ perch (the fillet is big enough that it doesnt overcook while the crust browns). 

Crust: melted butter/panko/lemon juice/pepper

Apply small amount of melted butter to fillet, cover fillet in crust (just top not bottom), baked @350 for 5-7min, turn on broiler for a few til crust has good color. BAM!

Looks great and easy Tim!  Make sense the little ones will overcook, I guess.  Would be great for walleye, though!

 If you use little ones might just go straight broiler for like 4-5min.  Its a balancing act.   

Seems with little ones you always get either a soggy undercooked crust if you pull when fish is perfect, orrr if you go for a nice crust the fish ends up tough and fishy tasting
