New England Style Walleye Chowder

Not fishing today, so I stayed warm and made chowdah using some recently harvested walleye fillets. 

I have plenty of fillets, so I thought I'd take a break from tacos...   ;D.
Plus, I lived in Boston for three years, and I miss CHOWDAH!

I had some great seafood up in NH.  Also loved fishing Winni.  My favorite bass pond is up near Concord.

Probably, yes. I think the better option would be fish stock, as that’s the traditional recipe.  But all I had today was chicken, and it turned out pretty dang good anyway!

Great looking comfort food, especially delicious on a cold and windy day! Just had some this week with some thick cut toasted and buttered French bread. I’ll have to give that recipe a try, thanks for sharing Nate.

My wife makes a killer trout chowder that looks fairly similar and tastes great!

love making fish chowders.  perfect way to use a small catch and make dinner.

ill tell you one thing about fish chowder I learned.  its 10 times better with fish stock!  I cant buy fish stock here so I have to make it.  I love to cook and experiment and that brought this on.  wife loved my fish stew/chowder until she came home early from work one day and caught me making stock. lol hey its unsettling to some but its just food.  and the best flavored fish soups you can make!

if your interested- scale and scrub entire fish especially the head.  fillet fish and remove and toss the skin.  take the fish heads and carcasses and put them in a pot with water salt pepper onion celery and carrot. simmer them for 45min. or more if you want to.  strain out all the bones of course and you are left wit the fish stock chok full of collagen and flavor!!! so much collagen in fact it will jell up in fridge like pork or chicken stock! its the best base for any fish soup/chowder.  ill guarantee you will enjoy the ends results.

ah(read the link) I see you use chicken or fish stock in it already.  nice chowder you got there brother.  I have never seen fish stock in the store around here.

Thanks, Tim!  I think I’ll be trying chowder with different fillets, to see which I like best.  One thing I’ll say, is walleye doesn’t have a ton of fish flavor to hold up to the chowder.  Bluegill or crappie might be good to test.  When I fished Moosehead in ME, we kept a bunch of cusk (burbot) and my friend made one of the best fish chowders ever!

Agreed!  Out here, I think Whole Foods carries some.  I just didn’t have any.
