I have always wanted to catch a whitefish also, but I don't know if I have ever fished in a lake that has them. Lake Piseco and Pleasant, near Speculator have them also. I think each lake has its own regulations about keeping them. I believe they can be caught in the same depths and locations as lake trout as they are cold water fish, but I have no idea what size minnow they would go after, or what kind of lure or jigging technique to use.
In Michigan, they still have a commercial fishery for whitefish, and eating them is a religion there and you almost can't find a restaurant that does not serve it. I have eaten fried whitefish out there a couple of times - it is a mild, flaky white meat and nothing remarkable about the flavor at all. I would never trade my perch or crappie fillets for it, maybe not even my best pike fillets. It still would be an interesting catch for sure and a serviceable fish fry if you are allowed to keep them from the lake you are on.
