You gotta let them run a bit, but I would check out some of the post on quick rigs.  Greatly decrease the ammount of pike I missed.

Honestly, I bet nobody gets them all.  It wouldn't be very sporting if that were the case.  I have heard many old timers say to wait for the second run the fish makes, but honestly, I don't.  I take it as soon as I see the spool turning.  I would rather take a shot early and miss, than have the majority of my fish gut hooked.  I guess it's preference, but I would err on the side of fish preservation and limit kills (unless you're going to eat it, of course).  Good luck!

If your using quick strike rigs with small sharp trebles you set the hook whenever the pike has the bait, which is whenever the spool is steadily turning. I hook most every fish. "Letting them run" when you are employing quick strike rigs is a good way to miss them.
Politically incorrect, and proud of it.

I agree with hookset.  I like to hit them when they are running.  I use a quick strike rig with  one treble (placed behind dorsal fin of minnow) and single (octopus hook from gamagatsu) behind the head of the minnow.  My reasoning for the single hook is it is easier to get the single hook out.  It also does less damage to the gills if it is hooked there.

I use a single treble and get a decent hook up percentage.  I am going to try those quick strike rigs.  I just get too anxious and set the hook when it is running.  My father always tells me to wait for the second run but I just cant.
