Baked Parmesan Crappie

This is by far my favorite was to cook fish.  Good with perch, crappie, gills...

Ingredients

1 or 2 eggs
¾ cup Panko Italian or any bread crumbs
¼ cup Parmesan cheese
¼ teaspoon ground dried thyme
Fish fillets
¼ cup melted butter

Directions

1. Preheat oven to 500 degrees

2. In a small bowl prepare an egg wash. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the fillets in the egg wash and then press into the crumb mixture to coat. Place fillets in a glass baking dish, and drizzle with melted butter (sometimes Ill just spritz with olive oil.  This just gives the coating some crunch.

3. Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

I serve with rice and some lemon.
