baked bluegill recipe??

anyone have a baked bluegill recipe thats not covered in butter??  looking for something different than pan frying. Thanks

Baking magic. Wet fillets and cover them with Baking Magic and bake at 350 degrees.

We just lay them flat on a cookie sheet.  Cover w/ Panko crumbs of your choice and sprinkle Parmesan cheese over them.

Milk/egg wash, mix some Andy's breading mix with a little straight cornmeal, then dip, shake, and put them in a lightly greased Cast Iron skillet and into the oven at 350* for about 20 minutes. So good I haven't fried a fish this season!

Brush the fillets with garlic infused oil
Single layer in baking dish
Top with salsa, Asiago and your favorite stuff. I like sliced black olives

Bake hot...450* till tender..

I make a tray out of foil. Cook them on the gas grill. I use different spices. But its hard to beat butter n Janes Crazy Mixed up salt. Sopmetimes I let them on till they are golden brown n slightly crunchy. Like Gill chips  ;D

Fish Taco or Fahita. Soft green spinach shell, spinach,breaded fillets, sauteed pepper and onions, salsa, hummas and shredded cheese, and a little home made tartar. Roll up this bad boy and add a cold beverage. ;)

poached BG fillets - skillet, low heat - spray with cooking oil-tablespoon of olive oil, few slices of butter, shot of lemon juice, fillets, cover 3/4 thickness of fillet with water, pepper, Bay seasoning, salt, when turned white flip over for a few minutes - works great with bluefish too(and striper)

Forgot the easy way out; spray a casserrole dish, lay blue gill or crappie fillets out to cover dish, dump in a can of clam chowder, and top it with seasoned  bread crumbs. Bake till the crumbs start to crisp or about 15min at 350 nor so. This is one I use when I'm just too bushed to get creative. ;)

Microwave safe dish
Top a layer of fillets with;
Italian dressing
Franks red hot
Grated Parmesan
A couple of dots of butter...or skip the butter
Sea salt and cracked pepper

Cover tightly with plastic wrap

Nuke for 2-5 minutes  depending on fillet thickness (start short)

Serve contents over rice.

Try it once and you'll be hooked

Lay fillets in a baking pan, spoon some salsa on, and bake.  15 min at 500 degrees   Serve with rice and veggies.

Here's a recipe the Mrs. and I enjoy....

Preheat your oven to 450 degrees...

Start with a 9x12 (or is it 13?) inch casserole dish.

Take a pound or so of panfish filets and dredge each one individually (both sides) in Italian dressing... just dump about a cup into a shallow bowl and use that to dredge the filets.

Lay the filets out on the bottom of the casserole dish so that they completely cover the bottom and then cover the filets with a mixture of 1/2 cup of crushed potato chips and your choice of 1/2 cup of Italian or Panko bread crumbs, along with 1/2 cup of freshly grated Sharp Cheddar Cheese. Mix the dry ingredients together well prior to covering the filets. We mix them together in a quart ziploc bag. The type of chips are your choice as well... the Mrs. and I like either Salt and Vinegar or Sour Cream and Onion.

Place in the preheated oven and bake for 15 minutes... dust with paprika prior to serving.... ENJOY!!

flash boil them  then put in ice water ,drain  crush a little lemon juice on them and dip in  cocktail sauce and eatem up
