I am in and out of a lot of commercial kitchens in my job. Here's a tip for ya. Drive around back, look at the back door and dumpster. If everything back there is black and filthy, keep driving. The kitchen will be greasy black and filthy too. If it looks like they wash their dumpster and back door on a regular basis, chances are the kitchen is spotless.
