i just did the same with a venny tenderloin.  i like to wrap lots of things in bacon but always fry the bacon a bit before hand to make sure it gets crispy.  also broil the bacon wrapped anything for the last 5-10 min.

Thanks for the advice. The bacon was under cooked. Next time I'll take the meat out a little early, crank the grill to 500 degrees place the meat back in and sear it!

Took out a bag of crappie, but wifey changed the menu to steak salad,with French fries.  Getting a little tired of Christmas left overs,smoked turkey,yams,stuffing balls,broccoli,Brussels sprouts,garlic potatoes,cranberry apple casserole.

My sweetheart's gone to her mother's for the evening, leaving me to "bach" it.  While the cat's away...

A cup of left over gumbo for a starter. 

Then a 6 oz bacon cheeseburger fresh off the charcoal Weber w/ sharp cheddar, dill pickles, jalapenos, mayo and Campari tomatoes on a toasted whole wheat bun.  A generous heap of oven roasted crinkle cut French fries on the side.  Oh, and don't forget the Cajun Chef hot sauce on the fries...

And to enhance the whole meal, a couple pints of The Old Tennis Shoes Brewery's Keds Kolsch

Tonight penne casserole. 1lb venison,1lb homemade loose italian sausage,sauteed with chopped onion,fresh garlic,add two two quarts of my home canned heirloom tomato sauce,simmer an hour or so,add boiled penne,top with parmesan,and shredded mozzarella, bake 20 minutes,with a loaf of garlic bread,tossed green salad,and in feeling a nice glass of red wine.

Never made gnocchi but practically everything else under the sun. I may have to take a swing at that  ;D.

I'm slummin' it tonight: 2" thick ribeye, sauteed onions and peppers with a baked tater and salad. Two dinners plus two lunches for me.....

@1moslab: Yup, there's a cadre` of culinary artists here at IS. I've done a good bit of cookin' in my years but I can always learn something new here. And yes, I did copy that stuffed chicken thigh recipe



Now that I've broken my posting silence hoping to win the fly 'n jig assortment from Rg I may as well make it worth my while.....

What did you guys miss?

Last night EZPZ chicken fajitas with guacamole.

Sunday night was a great start to the week: Seafood (lobster, scallops and shrimp) Newburg.... what? It's the Newburg sauce that is unique. Hot milk and tomato paste thickened with a butter/flour roux seasoned with paprika, curry, cayenne and nutmeg. Salt and pepper to taste and not enough curry or cayenne to make it overly hot. Very different and very tasty. Serve over rice (Jasmine) and had garlic sauteed green beans on the side. BTW if you're a cheap smack like me just shrimp works very well. That and you can make a double (or double double) batch to freeze for future convenience meals (just add meat).

Got another one I do like that (courtesy of Emeril Whatsisname) that has the stock base made in bulk and frozen to add shrimp, fish and oysters. Wholly moley...... Double Yum! Look for the "Creole Court Bouillon" (say "coo booyon") recipe on line. I follow that and it is killer!

OK, I got enough mileage out of this post. If Reb was here he'd chip in but I think he's on a sabbatical......

Tonight shrimp and crappie chowder,1lb raw shrimp 1 lb cube crappie fillets,celery,onions,diced potatoes,chicken stock,half and half,about tablespoon of tomato paste,black pepper,old bay fresh parsley.. My wife calls it Shimp and Crappie bisque.  Homemade Asiago cheese bread,and a "Fun salad" I can't  wait for that mystery salad.lol Tomorrow I'm smoking a whole pork loin. I cut it in half,ones Cajun the other ones lemon pepper dry rubbed been wrapped in fridge since yesterday. Today I picked over 2 lbs of Brussels sprouts,I'll do them with bacon and balsamic vinegar,got to have my garlic mashed potatoes. I gathered some Apple wood from one of my old trees for the smoke. 155 degrees and there done.

Well I found out what the fun salad was. Baby spinach and other baby greens,granny Smith apples,red grapes,oranges,cashews,sweet onions,baby burples cucumber,and feta cheese,with a sweet red wine vinegar dressing. I have to agree it was FUN
