That's a Bluegill, no that's a Sunfish...I've heard it both ways!!

I cook a lot of fish in the summer for my friends and extended family. I always ask what they like best with out telling them which is which.  They usually get ranked perch sunnies then walleye.  Although all are loved and devoured. I will take perch over everything from catching to cleaning to eating.

As Frank Perdue says you are what you eat and if you get a walleye that has been feeding on gizzard shad they will have a more pronounced red line under the skin and will taste a little strong.  I've talked to guys who have taken some nice eyes from Ibay and won't keep them any more for eating.
