I came up with a new way to make baked potatoes that were a huge hit with the family.
So I thought I would post it here for anyone that may want to try it.
After the potatoes are washed I rub some olive oil on them and sprinkle with coarse kosher salt.
Then I bake at 400 degrees for about 45 minute depending on the size of the potatoes.
Slice and open the potatoes and put in a large soup bowl (these are 30 ounce bowls)
Then add some sour cream and butter.
Top that with some grilled perch fillets (These were small perch so I added a few extra fillets)
Now ladle on a scoop of creamy clam chowder.
Add some shredded Cheddar and Monterey Jack cheese.
And finally top the whole thing with fresh crispy bacon and sliced green onion.
Serve and enjoy!
Bonus: Potatoes are now recognized as a heart healthy choice by the American Heart Association.
