Dexter Russell fillet knives?

I have always heard great things about these knives for butchering. How about the fillet knives?

I have a 9 narrow sani safe model. It really holds an edge. Makes short work of stripers. I just wish they had a 6 inch model. I also have a New Haven style oyster knife. One of the easiest oyster knives I've ever used

Take a look at the Forschner lineup also. I like them better than the Dexter Russell and they're at a similar price point for a commercial processing knife. Sure nothing fancy but great steel. I use both fillet and 6" boning knives.
We're born, we live for a while, and then we die.  Sounds like a good reason to go ice fishing.

I have eight of the Dexter Russell fillet knives, and would not use any other for cleaning fish. I haven't found any knife that is easier to use and sharpen than these. I keep them in my boat, tackle box, portable shanty and the kitchen knife block. Just recently, I found that Resturaunt Supply had the seven and eight inch knives for 5.98 each. I could not resist. Six more in case of an emergency. :o

I have used the wood handle boning knife in the link for close to 50 years for processing deer. I use an old Dexter beaver knife that has a rounded tip to skin with

I might have to give the Dexter Russell fillet knife a try. Like I need another knife.

I have a Rada knife sharpener fastened to my fish cleaning table to sharpen my knives. After I bought my first Rada Sharpener I was able to get a good edge on some knifes that I could never get sharp as I am not very good at sharpening knives to begin with.

I have four Russell fillet knives (8 &9” blade). Two are over 20 years old and two purchased last year.
All of them are carbon steel with wooden handles. 
They hold the sharpest of edge and flex well along the ribs. 
They will rust if not cared for after being used.
In my book they are the one and only fillet knife for dink Perch to Tuna.
Lots of my friends like the electric type but I guess I’m a hold out from the old days.

i use the wood handled carbon steel ones for years, work well but i do need to keep a stone on the counter when cutting lots of fish, just a swipe or two on the stone every othe fish. they sharpen quick. last few years ive been using a leech lake though.
