What in your opinion is the best eating fish?

Just curious to know what species of fish you target when you feel like eating fish?Either open water or hard water? I personally target flounder when the stomach is crying for fish.

Walleye on the grill.  But since they are hard to come by sunfish/crappie are my second choices.

im originally from florida and i love the mahi mahi (dolphin fish) blackened or grilled, or a good thick tuna steak cooked the same way...as for freshwater, i prefer the crappie, walleye and pike. oh, and perch too!

If you are willing to take a little extra effort in cutting around the Y bones, a nice northern out of cold water cant be beat.  They dont seem to taste as good out of warm water. A close second would have to be perch

nothing is better to me than fresh caught flounder,or alot
of other saltwater fish.for freshwater i'd have to say walleye
and catfish

Salt Water #1 Blackfish #2 Stripped Bass #3 Flounder
Might sound strange but I put Walleye well down the list. I think its highly over rated just like the Weakfish in the salt water.
