Just curious to know what species of fish you target when you feel like eating fish?Either open water or hard water? I personally target flounder when the stomach is crying for fish.

Walleye on the grill. But since they are hard to come by sunfish/crappie are my second choices.

im originally from florida and i love the mahi mahi (dolphin fish) blackened or grilled, or a good thick tuna steak cooked the same way...as for freshwater, i prefer the crappie, walleye and pike. oh, and perch too!

If you are willing to take a little extra effort in cutting around the Y bones, a nice northern out of cold water cant be beat. They dont seem to taste as good out of warm water. A close second would have to be perch

Might sound strange but I put Walleye well down the list. I think its highly over rated just like the Weakfish in the salt water.

I like fresh broiled or grilled salmon, and it's hard to beat a perch fry. Don't have Walleye up here in Maine so I have no voice in their flavor. I did have Walleye in Michigan, at a restaurant so it doesn't count. A fish fry in Michigan included frog legs, walleye and something else. Unusual fare in Maine.

You can never beat a good perch fry. If I had my choice thats what I would take every time. Crappie are another good fish. Actually any pan fish is preferred over the others.

for some reason it sounds strange to hear people say Northerns, how do you cook them?What do they taste like? I live in Ma, no one eats them. My fav fish would be a brookie in tin foil, with mushrooms, and lots of butter!

Walleye is without a doubt the bect eating fish that swims. However, try this as a salad with your fish dinner...
Take a couple hands full of Perch filets and boil them in seasoned water until they are just done. Then cool the filets and crumble them over a nice blend of field greens, now put a couple spoons of your favorite cocktail sauce on the top. Mmmmmmm, makes for a great salad.
Cocktail sauce: Ketchup, course horseradish, Fine chopped Green Bell Pepper, salt, pepper. Mix and let sit for a few hours.

#1 Fresh 1 1/2 lb. walleye, salt and pepper for seasoning, thrown into a hot iron skillet full of melted butter. Yum ;D
#2 Fresh salmon fillet seasoned with salt and pepper, coated with olive oil. Throw this on a hot BBQ. Oooh man...a knockout. ;)

I always thought that trout on the grill was the best. Then I had Halibut olympia. :P hold on my mouth is watering just thinking of this. Catfish deep fried is also taste. The best fish of all would have to be one that you caught. A sweet reward. Pike is great if you learn how to get the y bones out. Easy to do. :'( ;D

I feel sorry for those of you that don't have an ocean next to you to fish.The best eating fish definatly come out of the salt.Smelts,grouper,red snapper,flounder,haddock,cod,mako,bluefin tuna steaks,maui maui,and the list goes on.You landlocked fisherman can have your eyes,pike and perch but give me a nice piece of haddock fried,baked or broiled anyday.And for an appetizer scallops wrapped in bacon.

I love a variety of fish. Crappie, perch, walleye. Red snapper, halibut, sheepshead, northern pike, sunfish, bass.... Anything caught fresh and prepared and seasoned correctly.
Give me one, two or more species on the same plate (a mixed grill if you will).
Smoked, fried, pickled, baked, poached, grilled...
I don't care if it is saltwater or freshwater. I want it as soon after it is caught as possible. Mmmm mmmm

I have a new "best fish". In light of the poor fishing locally here for the past couple weeks, my vote goes for "any fish I can land and put in the frying pan" LOL. One fish in two w/ends. Yeeesh!! :'( :'( :-/

Brown Trout and/or Salmon with salt and pepper fryed with butter in a cast iron pan on a coleman stove on the ice, ten-twenty minutes after coming up through the hole... big 2"x2" chuncks of largemouth bass filets in egg batter deep fried.... freshly caught smelts dipped in egg/milk then rolled in flour/seasoned bread crumbs in peanut oil... baked togue with crabmeat stuffing (a big one - 5 or 6 pounder)... Surf & Turf Quad Buffet: Trout, Bass, Smelts, Venison, Rabbit, and Grouse...

Perch, perch and more perch. But if you want to really know, compare prices at your local fish market. Usually, the better it is, the more it costs. Example, round steak vs. filet mignon, or Pabst vs. Molson. Around here lake perch costs between $10 and $13 per pound (no I've never paid for it!). And no it's not because they are a smaller fish, because smelt are $3 per pound. I just deep fry them. Nothing fancy. They taste great.

Any of you guys smoke your fish?(NO not with ziz-zag papers) The wife just got me a smoker for my birthday and after a day of getting some nice landlocks in Maine I decided to give the smoker a try.I used some apple wood to smoke the salmon in. Man what a difference in taste! I cooked up a mixture of Salmon,scallions and scrambled eggs and thought I was in heaven. This smoker has deffinstly got my brain working overtime.

I thought perch were my favorite but I just had a meal of Lake George Laker fillet and have changed over. Perch are now a close second...

i made a smoker out of an old uprite freezer. here in milwaukee,wisconsin we have some good fishing on lake michigan for trout and salmon. to smoke a salmon whole i hang it from a hook by the tale and use apple wood. do not use mesquite it will ruin your catch. and by the way when you put a whole smoked salmon on a plate your guests will pig out and you can sit back and pat yourself on the back for a job well done.

MMM brookies in butter are so good especially thouse likke 6-7 inchers but for ice fishing around here my fav is some deep fried crappie in beer batter or bread crumbs and even sometimes a little old bay

Of the ones that I keep ice fishing, Crappie! ;) mmmmmmm good. Best if caught through the ice too.
Of any fish, I'd have to say that Swordfish or Salmon is my favorite.
But, I also like trout, bluegills, yellow perch, walleye....

My Favorite fish to eat is sort of like asking what is my favorite beer to drink. I may have a slight preference of one over another, but if you put it infront of me I'll take it! ;)

[My favorite fish is any fillet which will fit an oblong glass baking dish approx 8" X 20".
Take your fillets and layer the complete bottom of the glass baking dish.Season with salt/pepper.
Cover all fish with a layer of mozzarela cheese sliced or shredded.
Now spoon a jar of spaghetti sauce over the cheese.
I add an additional layer of cheese but this is optional.
Bake uncovered at 350 degrees for approx 45 min.
You will really like this one. An old italian lady living near Lake Erie used to beg me for Lake Erie Sheepheads so she could make this dish as often as possible. I have tried all kinds of fish for this recipe, and it is GREAT!!!!!!!!!!!!!!!!!!!!!!!

I've savoured alot of freshwater ling but in my books they are a close 2nd behind sturgeon. Different fish for different fishermen heh ;)

Perch,Northern pike, Walleye, L.M. Bass beleive it or not Crappie Bullhead. Thats for fresh water as for salt Mahi Mahi Blackend on a hard roll with lettuce tomatoe and mayo. Or a nice Tuna steak med rare. A good freind of mine works on a tug and runs bardges down to Florida and while their out they troll all the way down with clothes line and uses weed eater line for leader and hand lines the fish in when they get one. Last year he gave me a 35lb Mahi Mahi and boy that didnt last to long in the freezer I think we ate it in 2 settings and it took about 2wks. to get the smoke out of the house after blackening it. Just kidding but it was one great tasting fish! But in all honisty I'll try most any fish I love to fish and eat them!

Lately I have enjoyed some catfish, seasoned with lemon pepper.
fried in an iron skillet. The taste is just great.
When I bake a carp=====on a board, I throw away the carp and eat the board!!!!! just funnin guys. all thow a smoked carp has some merrit.

bluegill/perch are number 1 out of freshwater - hands down. Walleye are perhaps the most overrated of all freshwater fish. They are good, but not that good. A very bland fish. Crappie are good in winter, otherwise the flesh tends to be too soft. How about smoked whitefish?? Now THERE is a darn good eating fish! Going seining for them this weekend!

Most any fresh fish is good if prepared properly. Cold water fish are especially tasty. For some reason fish and game that I have harvested myself always taste great.
The best IMO:

4. lake trout
5. Northern (pickled)
6. sunfish

I love cod. Broiled with garlic and butter, salt and pepper. Trout baked outdoors on the fire same way is awesome.

I will eat almost any type of fish, AS LONG AS IT IS FRESH! When one cathes his own fish, he can guarantee their freshness. Fish that are marginally edible or even inedible by my standards from tepid summer water become delicacies when caught through ice. Examples are yellow perch and bass - I don't really want to eat these unless caught through ice. I also do not let bones influence my rating of the table manners of fish. How hard is it to really pull Y bones out of a cooked pike fillet? Not too difficult. Also, the flaky white delicacy known as fried pickerel includes those fine bones that cannot be romoved. SO? They are fine enough to chew up and not worry about. If people did not freak out so much about the bones in pickerel, the pickerel honey holes that I fish would be elbow to elbow fishermen in the winter.

On page 9 and I have not even seen my Favorite fish thus yet so I have to contribute…..Hands down an by far the best tasting fish in my book is fresh caught Atlantic Cod. Fish and chips.
Freshwater fish –fried breaded perch fillets caught from water temps below 40 or a close second smoked salmon or trout.

Pike - but only from under the ice ;D And I have found a huge difference in flavor/taste from one body of water to another. I LOVE pike from Black lake - meat is darker and much more tasty - 8)
Edit - Also, gotta know how to filet them boney critters. After that, they are a tasty meal.

i agree.. pike all the way.. you gotta get em bigger than 30" though otherwise their more work than its worth with the ybones.. but the meat is even better than walleye

As I fish all waters and all year round, I have to put a vote in for Black Sea Bass or Porgy's "Scup". I know their impossible to find them under the ice, but there are good eating! :tipup:

agree 100% with results, but really cant believe bluegill wasnt closer to the top? maybe not as many guys fish for 'em

definatly northern pike. lots of guys havent tried it but once they do they swear that it is the best walleye they ever ate.. nope its a pike.. also, lake trout is VERY good, and brook trout aint bad either.. walleye beats panfish up and down and 1 22" walleye is the same meal as 6 medium panfish and WAAAYYY easier to clean ;)

Pan fried filet between 2 slices of toasted tomato bread with just a little Thousand Island dressing.

Trust me if you have so that the top and bottom are seared to be crispy, it's the best.

Striped bass fresh or salt water! You can grilled, fry, bake, or broiled them just remove the red flesh, and enjoy. (I haven't try them as sushi yet)!
