Never ceases to amaze me how good that first batch of hard water fish taste. Here's mine perch and gills; seasoned Italian bread crumbs with a little parm mixed in. Pass the tartar sauce, please.

It's the basic egg wash and dip. I usually spray the pan first, and cook over medium heat. A couple little pellets of butter per side, and swirl the fillets around the pan a bit, in order to brown. Tried it again last night; just as good as my first batch. Wonder how I'll cook the crappie tonight? What a dilemma! ;)2

I gave my first fillets of the season to Ice Rebel and Rebelfisher.
But, I did have one of these for lunch today.
It was absolutely delightful! :blink: :sick:
