Marinated / cured steelhead

This cured / marinated salmon or steelhead recipe, is my favorite. Similar but milder than  cold smoked salmon or gravlax, and no smoke is used. Works with most salmonid species, with wild caught steelhead and kokanee salmon topping the list.
